Ingredients
- 1 kg chicken breast or thigh fillets, cut into cubes
- 1 onion, quartered
- 2 green peppers, cut into squares
- 2 peaches or apricots, sliced (fresh or canned)
- Skewer sticks (soaked in water if wooden)
Marinade:
- 125 ml peach chutney or jam
- 45 ml tomato sauce
- 15 ml soy sauce
- 5 ml curry powder
- 7 ml salt
- 15 ml oil
Method
- Make the marinade: Mix all marinade ingredients in a bowl.
- Marinate: Add chicken cubes, stirring to coat well. Cover and refrigerate for at least 1 hour (or overnight).
- Assemble skewers: Alternate chicken cubes, onion squares, pepper squares, and peach slices on each skewer.
- Braai or grill: Cook over medium heat, turning often and basting with leftover marinade until chicken is cooked through and nicely browned.
Serving Suggestions
- Serve with braaibroodjies or a simple green salad.
- A side of pap (maize meal) or garlic bread complements the sweet-and-spicy flavours.
