Vetkoek with mince is, much the same as with curry mince with rice, always a favourite dish on any table.
Why not try this recipe with pork mince as main ingredient?
Ingredients
- 1 onion, chopped
- 15 ml crushed garlic
- 1 kg Malu Pork mince
- 60 ml medium curry powder;
- 60 ml chutney or apricot jam;
- 25 ml turmeric;
- 20 ml white vinegar;
- 400 g canned vegetables in brine (discard the brine)
- 2 bay leaves
Method
- Fry the chopped onion and crushed garlic over medium heat until light brown.
- Add the pork mince and fry until cooked.
- Add the curry powder, chutney, turmeric and vinegar. Mix through and allow to cook for five minutes.
- Add the canned vegetables and mix it well into the mixture.
- Add the bay leaves and close the lid. Turn off the heat and allow to rest for ten to 15 minutes.
Serve with rice or in a traditional South African vetkoek.
