Vetkoek with mince is, much the same as with curry mince with rice, always a favourite dish on any table.

Why not try this recipe with pork mince as main ingredient?

Ingredients
  • 1 onion, chopped
  • 15 ml crushed garlic
  • 1 kg Malu Pork mince
  • 60 ml medium curry powder;
  • 60 ml chutney or apricot jam;
  • 25 ml turmeric;
  • 20 ml white vinegar;
  • 400 g canned vegetables in brine (discard the brine)
  • 2 bay leaves
Method
  1. Fry the chopped onion and crushed garlic over medium heat until light brown.
  2. Add the pork mince and fry until cooked.
  3. Add the curry powder, chutney, turmeric and vinegar. Mix through and allow to cook for five minutes.
  4. Add the canned vegetables and mix it well into the mixture.
  5. Add the bay leaves and close the lid. Turn off the heat and allow to rest for ten to 15 minutes.

Serve with rice or in a traditional South African vetkoek.
